Part 2: Interview: John Duval - John Duval Wines

If it is true that the place where the wine is made is as important as the man making the wine, most people will not remember the man making their favourite wine and this is a shame. There are no exceptional wines without exceptional winemakers. Take for example John Duval. He was Chief winemaker for Penfolds, making the most famous Australian wine "Penfolds Grange" from 1986 until 2002.

 

 

 

 

 

 

 

After leaving Penfolds he consulted for different wineries across the globe and in addition decided to set up on his own in 2003 and launched 2 fantastic wines Plexus and Entity under John Duval Wines, his own brand. We met John at a wine tasting in London at the end of January and he was kind enough to take some time with us and share his inestimable experience.

Part 3: Wine Tip – The Length, or how to assess the quality of any wine.

Quality and length are highly correlated things in wine. There is not a good quality wine which hasn’t got good length as well. The reason is the greater the quality of a wine, the greater the intensity of the flavours of that wine, and the longer these flavours will linger in your mouth once you would have drunk this wine.

How can we define the length? The length is how long the flavours of the wine linger in the mouth once the wine has been swallowed or spit out. The length is defined in seconds or “Caudalie”, a French word, where 1 second=1 Caudalie.

Now what is a good length? Find below some guidance:

1 to 4 seconds: Short to Average Length. Most wines drunk by the way.

5 to 8 seconds: Good to Very Good Length.

9 to 15 seconds: Outstanding to Exceptional. The Best Wines only!

Above 15 seconds: Very rare! Some exceptional wines only.
