Happy New Year!

January is usually very tough on us because we have to face our New Year’s resolutions but also because the gorgeous Christmas meals are over... But do not worry as it will not stop us talking about wine and food at least! Our interviewee this month is one of the most distinguished French Chefs in the name of Hélène Darroze. Hélène got 2 Michelin Stars at her restaurant in Paris in 2003, and crossed the Channel in summer last year to oversee all kitchens at the Connaught Hotel.

With the New Year comes a new theme. This month we launch our “Glass Tasting”. And no, it is not about tasting glass! We will invite you to taste the same wines but with different glasses and experience how shapes can impact intensity of aromas and tastes. You would be very surprised!!

And we finish this month’s newsletter with a couple of recommendations for Winter wines, to warm up in the freezing cold!

Part 1 - New Tasting Theme - Glass Tasting

A very surprising tasting which will make you think differently about wine. Why do different glasses impact tastes and aromas in wine?

This is what we invite you to find out: we will taste the same wines in different types of glasses and see how the aromas and tastes are impacted. We will play with volumes, shapes and thickness of glass and discover the consequent modifications. This tasting can be applied to varied group sizes and will suit clients or colleagues having or not any wine knowledge beforehand.

As always, we will work with you on a bespoke basis completely, adapting content, length and technical level to the audience.

Part 2 - Interview - Hélène Darroze - Head Chef - Connaught Hotel

Hélène Darroze is one of the most successful and famous Chefs in France, and very interestingly she learnt the ropes by herself when most chefs of her calibre go through a long and difficult apprenticeship. But even more engagingly, her cookery is a mixture of her background in the South West of France where she grew up but also her different trips, the people she met and of course her emotions. As she likes to say “It is what I am which is in the plate”.

 

 

 

 

 

 

 

Her restaurant in Paris got 2 michelin Stars in 2003 and recently she came to London, seduced by the Connaught Hotel to oversee all kitchens. We met with her at the Connaught Hotel in a busy schedule between Paris and London.
