Most
of you choose their wine from the grape variety. And
it is a good guidance. But how important is the grape variety
in the final taste of a wine?
What’s
very interesting to understand is each one has got a
typical set of aromas and tastes which makes it unique and
identifies it or should identify it from those aromas and tastes.
Here are a few simplified examples of this:
Cabernet
Sauvignon: Black fruit flavours such as blackcurrants,
blackberries, with a touch of vegetal character such as green
capsicum if picked too early. Rather tannic, and providing good
acidity levels as well.
Sauvignon
Blanc: lime, blackcurrant bud or gooseberries, and
sometimes asparagus.
And it would be
very simple if your could recognize any Sauvignon Blanc or Cabernet
Sauvignon from those typical aromas! BUT it is NOT!!
And that is due to the following main reasons:
- Climate:
warmth has got a direct influence on alcoholic level and ripeness
of the flavours.
-Soil:
they contribute to producing a healthy fruit or not, and they
impact the taste of the wine depending on their types.
- Winemaking: whether you use oak barrels or
oak flavours, whether you reduce the acidity or not, whether
you increase the alcohol level, amongst many other techniques.....
Those above reasons
factors modify the final taste of a wine so
that the typical taste of a grape variety is not as obvious
as it was anymore! So depending on where the wine is
coming from and how it has been made it will taste different!
What to remember then is that there are different styles of
wines depending on their origins and you need to taste to discover
which one they are. So it is all about experience!
