Castello della Sala (part of Famiglia Antinori's estates) established itself as one of the leading white wine producer in Italy with their Chardonnay/Grechetto blend Cervaro della Sala which has won numerous awards since their first vintage in 1985. Bramito del Cervo is Cervaro's little brother. This 100% Chardonnay sees cool maceration and is then fermented and matured (5 months) in new French oak. The nose is delicate with apple and a mineral and spicy character too. The palate is medium-bodied with some roundness and a crisp finish.

Toro near Ribera del Duero has increased its reputation in the last 10 years or so when Vega Sicilia announced that they would be launching a new wine there, Pintia. Toro's natural environment is excellent with good elevation (600 to 700 meters altitude) to maintain acidities, good clayey soils, and great ripening thanks to the Spanish sun. Bodegas Matarredonda was launched in 2000 and has been very successful since, using old vines (80 to 140+ years) to produce deep and complex wine. Juan Rojo is made from the slightly younger vines (80 years) and matured in French oak barrels (barriques) for about 8 months. The wine is very dark, opaque. On the nose it is mutli-layered and intense with blackberry, iron, spices, smoke. On the palate it is full-bodied and showing great structure and will need another year or so to become fully approachable.
